Coffee Roaster Philosophy
We keep a fresh supply of globally sourced green coffee beans. Once you place an order from our roasted coffee selection we will begin to produce your freshly roasted coffee. We never roast until after you place an order. To accomplish this, we usually roast different coffees on different days to maximize our roast efficiencies. Our typical order takes two days to complete, then your coffee is on its way to you via USPS priority mail. In the lower 48 states, your coffee will be delivered within two to three days. Roasting coffee and shipping from Houston, TX provides a nice central location to service the entire US with freshly roasted coffee beans. This delay is beneficial to the coffee as it takes several days for the coffee to fully develop the origin flavors and aromas.
Coffee Beans
Roasting great tasting coffee is easy, locating great coffee beans is hard. We spend the majority of our time sourcing, locating and taking delivery of limited specialty grade coffees. There are a lot of poor/low quality coffee that we have to work through to ensure that you will only get finely roasted fresh coffee. Sometimes these micro-lots are as small as "half-sacks", 80 pounds, or grain-pro boxes at 30 pounds. Great coffee is like great wine, different from year to year. When we find a great coffee, we savor it, because when it is gone, it is gone.
Coffee Beans Life Cycle
Not to be forgotten, but green coffee beans are an agricultural product which have a shelf life. We always keep fresh coffee beans from the coffee lots of this current year. This ensures roast consistency for us and flavor consistency in your cup. Green coffee beans will last for approximately one year after harvest. Typically it takes 3 months to receive our green coffee beans after harvest, so this gives us about 6 to 9 months of use. Roasted coffee beans have a shelf life of approximately 4 weeks and then flavor and aromas begin to fade. Ground coffee begins to fade in 10 mins.

So our Store philosophy has always been, "Roasted fresh and never ground". Order your freshly roasted coffee a few days before you need and only as much as you will use in a month.
